Parrotfish - Cabernet Sauvignon/Merlot

60% Cabernet Sauvignon - 40% Merlot

Both varieties are from the cooler Koekenaap region, with grapes for this blend selected in the vineyards from specific vines with controlled irrigation and crop control. Separate alcoholic then malolactic fermentation was carried out for both varieties prior to final blending and fining.

This is a fruity, unoaked wine with excellent complexity and rich palate of blackberry, plum and cherry flavours, soft chalky tannins and long clean finish.

Parrotfish - Chenin Blanc

A Fruity, crisp and well-balanced wine with combinations of tropical, guava and apple flavours. The combination of residual sugar and balanced acidity give the wine a clean and crisp palate with a lingering aftertaste.

A premium selection of grapes from specific soil types and with low yields was harvested. The slow ripening process enabled us to provide a fruity wine with typical cultivar flavours. The fermentation was done with selected yeasts and at 15 ° Celsius.
